subject: Delicious Pancakes
So this cold spring morning I decided to make pancakes. I also decided to edit my normal recipe, the result was so delicious that I must share!

Fall Harvest Pancakes
Makes about 12 pancakes.

{u}Ingredients{/u}
2 tablespoons softened butter (use REAL butter! also I prefer salted)
1 egg
2/3-1 cup milk (you can also substitute buttermilk- the varying amount is for how thick you prefer your pancakes, I like mine really thick, so I use less)
1 cup flour (white or half white-half whole wheat)
1/8 cup cornmeal
1/8 cup quick cook oatmeal
1.5 teaspoons baking powder
0.5 teaspoons baking soda
2 tablespoons sugar
1/8 teaspoon salt
nutmeg and cinnamon to taste (I'd say I put around 1/2 teaspoon of each)

Mix the egg and butter completely. Add the milk and mix thoroughly. In a separate bowl mix the rest of the ingredients completely. Add the wet mixture to the dry mixture. Only mix enough to get the flour wet. It's okay to have little lumps. Let batter sit 5-10min.

Heat a pan (not non-stick!) to about 3-4 on the stove (that's what it has been on all my stoves). While you're waiting you can make the topping that I have listed below. Spray the pan with canola oil spray. Drop a spoonful at a time of your batter into the pan- I can only fit 4 at a time in my pan and it's pretty big. Cook until edges are lightly yellow to brown then flip, cook the other side for 1-2 minutes or until brown. Set aside and cook the rest. Top with Apple Topping when done.

Apple Topping

{u}Ingredients{/u}
250g apples (1/2 pound- one big apple)
Drizzle of {u}REAL{/u} maple syrup

{u}Directions{/u}
Cut apples. Put in a microwave safe bowl and microwave for a few minutes until just soft (time will vary depending on the strength of your microwave- it was 3 minutes in mine which is pretty weak). Drizzle {u}REAL{/u} maple syrup over the apples, put back in microwave for a few more minutes (depends on how soft you want the apples).

I named them fall harvest pancakes because they taste like that time of year to me, because personally- I'm missing the beautiful colours on the trees and the preparations for Halloween and thanksgiving.

I might make them for the boys but play around with non-wheat flours. I think oat flour would go really well in this.

Mmmmm . . . yesterday was a pancake day around here, too. Well, we had pancakes with blueberry-banana fruit compote and syrup, eggs, and bacon with mimosas--we had some friends up from Denver for the night.

The pancake recipe we had was for Cardamom Whole Wheat Pancakes, from The Chopra Center Cookbook:

1 1/2 cups whole wheat pastry flour*
1 1/2 t. baking powder
1/2 t. ground cardamom
1/2 t. nutmeg
1/2 t. salt
1 egg*
2 T. ghee or canola oil*
1/4 cup maple syrup
1 1/4 cups low-fat soy milk or rice milk

Combine dry ingredients in a bowl and stir together. Combine wet ingredients in another bowl and stir together. Add the dry ingredients to the wet and stir until smooth; do not overmix. Heat your griddle, put 'em on, cook, and eat.

* Didn't have whole wheat pastry flour, so just used regular whole wheat. This made the batter a bit thick, so I thinned it with some Sierra Mist 'cause it was handy. Water or milk would be fine, too. Didn't have canola oil, so just used veggie oil. Mr Smith can't do eggs, so used an egg substitute.

YUMMY! The cardamom adds a wonderful flavor, and the fruit compote was good with it, too.

My recommendation would be to buy whole cardamom pods and whole nutmeg and grind/zest them as needed. The pods would need to be cracked and the spice inside removed, which is kind of a pain, but FRESHSPICESOMGYUM!

I don't know of anywhere around here you can buy whole spices. I KNOW you can't buy whole spices that haven't been grown here as they're illegal to import.

Plus then we'd need to get a coffee grinder, and well honestly we don't have money to be buying random things. In the future I would definitely plan to do that though!

For now we just buy our spices at the bulk store and when we have a few extra dollars we move them out of bags into other containers.

And you don't need a coffee grinder; a mortar and pestle (or something that will serve as one) work just as well, particularly for small amounts of spices.

subject: Another delicious breakfast
So on another cold spring morning I decided to make an egg drop soup for breakfast- it came out pretty well I must say!

I cut up some mushrooms, spinach, and and onion and threw them into water and turned the heat up on the stove. While waiting for it to boil I beat three eggs and picked some chives which I then cut up and threw into the pot as well.

When the water boiled I added some rice noodles. When those were cooked about halfway I added chicken stock powder and a drizzle of sesame seed oil.

Once the noodles were cooked I slowly poured in the eggs while stirring.

That was a delicious warming breakfast!

You can use the back of a spoon in a mug or glass, or the butt end of a wooden spoon (or other utensil) and the cupped palm of your hand. Those'll work pretty well.

subject: Apple-ginger chutney
In today's adventures in cooking, I am attempting to make apple-ginger chutney. Ingredients thus far:

cored, peeled, and chopped apples (3-5 lbs?)
one yellow onion, chopped
about a cup or so of crystallized ginger, semi-pureed in the cuisinart
apple cider vinegar
honey
allspice
cinnamon
a pinch of ground cloves
nutmeg
a dash of cumin
red chili pepper flakes

Threw it all in the crock-pot. We'll see what we get in a few hours or so.
